Pre Catelan by Frederic Anton

Pre Catelan is my favorite 3 stars restaurant in Paris, food is excellent executed by Frederic Anton a young and talented chef that have learned with Joel Robuchon and that have succeeed on the famous MOF examination, he's also one of the chefs in the Master chef tv show

So food is excellent, service is great but moreover is the experience, it is not just a restaurant in a hotel, Pre Catelan is in a lovely house in Bois de boulogne... It have a soul and it's funny to cross the bois de boulogne to go there ;-)
I have been many times and I don't know why I have no pictures, actually it's the kind of restaurant where it was a bit shame to take pictures but nowadays it's so normal and natural to picture everything, to have your phone over the table,and even typing while dining is becaming normal with twitter and facebook.... And I love this new digital era.
So lets come back to food,
I first had a peas and onion cream.... Really good and tasty and not onion smelly

Then I had the caviar box ( well actually it's an impressive dish and presentation if you never tried it but I have already tried almost the same @ Robuchon in Macau.)
It's king crab salad topped with caviar, really tasty

followed by the bouillabaisse jelly, that was an interesting dish for the creativity, texture and taste. but not my favorite dish.

Then it was the foie gras foam with a raddish cream.... just impressive, bravo Frederic

I had after that the romana style fried articoke on top of an anchovy sauce well executed

then it was the langoustine ravioli with a light peper and mint foam, that was good but I'm still mad of the original langoustine ravioli and foie gras @ JR places.

Came after that "The" spaghetti with morels... it's just one super long spaghetti rolled, technically it's very impressive, and it was super tasty.

and to finish I had the best veal sweetbread ever, smooth as i never tested, cooked to perfection with an amzing veal juice and a good celery purée.

Dessert @ Pre Catelan are good, the Chef Christelle a cutie pregnant lady is doing well. Bravo

I tried the Citron meringué to change a bit from the apple ball. and it was delicious, a perfect equilibrium of all composants.

you then have a hot madeleine with a house made jam and some mignardises, all very good.

Pre Catelan is a lovely experience that I highly recommand. it really deserve it 3 Michelin stars as it answers to the criteria of "deserves a trip"..... it's quiet expensive but completelly justified.

Bravo to the team for such a great job.
